onions for the weekend

lying in bed on a sunday morning, watching something for the weekend, phil got totally inspired by a recipe they made on the show. i already knew he was excellent at putting together a curry night, but now he can add one more piece to the whole meal.... classic onion bhajis! on the show, they made pakora with mango chutney (involving pieces of broccoli and cauliflower, as well as onions), so this is a slight variation on that theme.

the particulars:

  • one yellow onion, thinly sliced
  • 200g/7oz gram flour (chickpea flour)
  • 1 tsp ground turmeric
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • salt and freshly ground black pepper
  • 4-6 oz water
  • sunflower oil, for deep frying
  1. cook the onions in a little oil to soften before frying. as they cook, prepare the batter. mix together the gram/chickpea flour and spices until well combined. add water in a thin stream while mixing until all combined and a thick batter forms.
  2. heat the sunflower oil in a deep frying pan. lower spoonfuls of the cooked sliced onion into the batter and carefully place into the hot oil in batches and fry for 4-5 minutes, or until crisp and golden-brown.
  3. remove from the heat using a slotted spoon and set aside to drain on paper towels. repeat the process with the remaining onions.
  4. serve with mixed greens and a dollop of mango chutney.

lesson learned: he did a great job for his first attempt. however, the batter was uncooked in the middle - so either be stingy with the batter or fry for longer.
