Anyway, the first thing I did today was make this molly cake I was so excited about. I mean, c'mon. If you found a recipe for a cake that included your name, you'd have to make it too. But the best part about finding this recipe was that it's a completely vegan and healthy cake! It must be my lucky week!
The rest of the recipes will certainly be blogged about, so don't worry. But I couldn't wait any longer to get something up here for you to see. Give this a try for a sweet treat that's completely sugar-free and vegan - it could also be very easily made into a gluten-free cake as well.
Based on a waitrose recipe - I have changed all measurements to be volume
- 1 1/2 cups pitted dates, roughly chopped
- 1 1/4 cups water
- 3/4 cup white spelt flour
- 3 tsp baking powder
- 1 tsp mixed spice
- 3/4 cup whole grain spelt flour
- 1/2 cup ground almonds
- 1/3 cup orange juice
- 3 1/3 cups dried, mixed fruit (or one 500g bag)
- Preheat the oven to 325F. Grease a loaf tin.
- Put the dates and water in a pan and bring to the boil. Remove the pan from the heat and set aside.
- Sieve the spelt flour, baking powder and mixed spice into a bowl. Add the whole grain flour, mixed fruit, and ground almonds and stir to combine. Stir in the wet date mixture and the orange juice. Mix well.
- Spoon into the loaf tin.
- Bake for one hour, or until a skewer comes out clean.
- Turn out onto a wire rack and cool.
Lesson learned: Molly cake gives Mollys everywhere a good name.
