When I was pregnant with Finn, I thought I would BECOME a watermelon, I ate so much of the stuff. My belly certainly resembled one towards the end there 😄
I don't know too many kids who don't ADORE watermelon, but I also don't know too many kids who can keep their hands from turning pink when they eat it!
Enter the Watermelon Lollipop! So easy for little hands and faces!
This is so not a recipe - just a way of preparing watermelon that I recently discovered and found to be borderline genius, especially when it comes to kids.
If you're like me, you look at a giant watermelon with a little bit of dread... SO MUCH CHOPPING. But this preparation involves no fancy knife work, and no tough watermelon skin removal.
Here's how you do it:
- Chop the melon in half along the "equator" of the fruit.
- For each half, place it flesh-side down on a chopping board, and cut roughly 1 1/2" slices across. Then turn the melon 1/4 turn, and do the same.
- You should end up with stick-like pieces of watermelon with the skin still attached in a square on the end of the stick, perfect for picking up and devouring like a lollipop!
