At this point in the year 2017, you've most likely tried (or at least heard of) riced cauliflower. I'll admit, it took me a while to come around to this idea. I'm not a big cauli fan - and I very much enjoy rice. But all it took was one try, and now I'm hooked.
Now, it's certainly easy to buy a bag of cauliflower rice from the freezer section at Trader Joe's or Whole Foods or wherever you normally shop for items like this... but a MUCH cheaper option is to buy a whole head or two of cauliflower from the produce section and grate it up.
This time around, I bought two heads of cauli and grated them with my box grater. You can also use a grater attachment on a food processor to save time and elbow grease. And that's it - you can freeze it up SO EASILY. Just put the prepared cauli rice in a freezer bag and call it a day.
When you're ready to cook with it, all you need to do it sauté it for a few minutes with some soy sauce (or tamari or Bragg's Liquid Aminos) for an awesome flavor boost.
